The food is either typical Bhutanese food, western style food, or a mix of both?

It’s generally mix of both and Indian, though you can choose to your liking in consultant with the guide. As much as possible, we try to serve meals outside in local tourists’ standard restaurant, so that guests get opportunity to try local cuisine or in accordance to their preference and taste.
